neutral oil sunflower or vegetable, ~150ml 8
acid lemon juice or vinegar 1 tsp per yolk
mustard optional, helps emulsify 1/4 tsp per yolk
Tips
- All ingredients at room temperature
- Add oil drop by drop initially
- Once emulsion forms, can add oil faster
- Immersion blender makes it foolproof
