neutral oil sunflower or vegetable, ~150ml 8
acid lemon juice or vinegar 1 tsp per yolk
mustard optional, helps emulsify 1/4 tsp per yolk

Tips

  • All ingredients at room temperature
  • Add oil drop by drop initially
  • Once emulsion forms, can add oil faster
  • Immersion blender makes it foolproof
